Key Lime Bars
Crust Ingredients
- 12 graham crackers, crushed (about 1 1/2 cups)
- 6 Tbsp unsalted butter, melted
- 1/4 cup granulated sugar
Crust Instructions
- Preheat oven to 350°F.
- Line a 9-inch square baking pan with parchment paper, with overflow on all four sides.
- In a medium bowl, mix the crushed graham crackers and granulated sugar.
- Stir in the melted butter.
- Pour the mixture into the baking pan. Press it flat evenly across the bottom.
- Bake for 10 minutes.
Filling Ingredients
- 4 ounces full-fat cream cheese, room temperature
- 4 large egg yolks
- 14 ounce sweetened condensed milk
- 1/2 cup key lime juice
- 2 tsp lime zest (about 1 lime or 2 key limes)
Filling Instructions
- In a large mixing bowl, beat the cream cheese on medium-high until smooth.
- Mix in the egg yolks.
- Mix in the condensed milk, key lime juice, and (key) lime zest.
- When the crust is done baking, let it cool for a few minutes, but while it is still warm pour the filling mixture evenly across the crust.
- Bake for about 18–20 minutes. The edges should be set, but the middle should be a tiny bit wiggly.
- Cool pan on a wire rack for 30 minutes, then chill in the fridge for at least 2–3 hours.
Final Instructions
- Remove from the pan and cut into squares.
- Garnish the squares with (key) lime wedges.
