Legally Distinct Black Chocolate Cookies
Cookie Ingredients
- 2 cups flour
- 1/2 cup cornstarch
- 1 1/3 cups granulated sugar
- 2/3 cup black cocoa powder
- 1/2 tsp salt
- 3/4 cup + 2 Tbsp salted butter, melted
- 1/4 cup + 2 Tbsp heavy cream
Cookie Instructions
- Preheat oven to 350°F.
- Prepare baking sheets with parchment paper.
- In a large bowl, mix flour, cornstarch, granulated sugar, black cocoa powder, and salt.
- Mix in the butter and heavy cream. Pack the dough tightly.
- On a cutting mat, roll out the dough to between 1/4" and ⅛" thick, and make pairs with a circle cookie cutter.
- (If using a pattern stamper, lightly dust with flour and press down while dough is still inside the cookie cutter.)
- Bake for about 10–12 minutes, until just crispy. The cookies will burn very quickly if too close to the sides of the oven, or baking for even a minute too long.
- Carefully place cookies on a cooling rack.
Filling Ingredients
- 3 oz cream cheese
- 1/2 cup unsalted butter
- 4 cups powdered sugar
- 1/2 tsp pure vanilla extract
Filling Instructions
- In a large bowl, mix the cream cheese, butter, powdered sugar, and vanilla thoroughly.
- After the cookies have completely cooled, group into pairs. Frost the bottom side of one cookie, and cover with the other.
