Legally Distinct Black Chocolate Cookies

Cookie Ingredients

  • 2 cups flour
  • 1/2 cup cornstarch
  • 1 1/3 cups granulated sugar
  • 2/3 cup black cocoa powder
  • 1/2 tsp salt
  • 3/4 cup + 2 Tbsp salted butter, melted
  • 1/4 cup + 2 Tbsp heavy cream

Cookie Instructions

  1. Preheat oven to 350°F.
  2. Prepare baking sheets with parchment paper.
  3. In a large bowl, mix flour, cornstarch, granulated sugar, black cocoa powder, and salt.
  4. Mix in the butter and heavy cream. Pack the dough tightly.
  5. On a cutting mat, roll out the dough to between 1/4" and ⅛" thick, and make pairs with a circle cookie cutter.
  6. (If using a pattern stamper, lightly dust with flour and press down while dough is still inside the cookie cutter.)
  7. Bake for about 10–12 minutes, until just crispy. The cookies will burn very quickly if too close to the sides of the oven, or baking for even a minute too long.
  8. Carefully place cookies on a cooling rack.

Filling Ingredients

  • 3 oz cream cheese
  • 1/2 cup unsalted butter
  • 4 cups powdered sugar
  • 1/2 tsp pure vanilla extract

Filling Instructions

  1. In a large bowl, mix the cream cheese, butter, powdered sugar, and vanilla thoroughly.
  2. After the cookies have completely cooled, group into pairs. Frost the bottom side of one cookie, and cover with the other.
