Dark Chocolate Cookies
Ingredients
- 1 cup all-purpose flour
- 3/4 cup Dutch-process cocoa powder
- 3/4 tsp kosher salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 10 Tbsp unsalted butter, room temperature
- 2/3 cup granulated sugar
- 3/4 cup dark brown sugar
- 1 large egg
- 2 tsp pure vanilla extract
- 2 cups bittersweet chocolate chips
- Flaky sea salt
Instructions
- Prepare baking sheets with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, salt, baking powder, and baking soda.
- In a second large bowl, on medium speed cream the butter, granulated sugar, and brown sugar until very light and fluffy, about 5 minutes.
- On low speed, mix in the egg and vanilla.
- Slowly add the dry ingredients.
- Add the chocolate chips and mix until just combined.
- Scoop the dough into balls and place on baking sheets. With the bottom of a glass, partially flatten the dough balls.
- Cover sheets with plastic wrap or foil and chill for at least a few hours.
- Preheat oven to 350°F.
- Sprinkle cookie dough with sea salt.
- Bake the cookies about 7 minutes. Rotate, then bake another 6–8 minutes, until slightly crispy on the edges, but still soft in the center.
- Place on a rack to cool.
