Dark Chocolate Cookies

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 3/4 tsp kosher salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 10 Tbsp unsalted butter, room temperature
  • 2/3 cup granulated sugar
  • 3/4 cup dark brown sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 2 cups bittersweet chocolate chips
  • Flaky sea salt

Instructions

  1. Prepare baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, salt, baking powder, and baking soda.
  3. In a second large bowl, on medium speed cream the butter, granulated sugar, and brown sugar until very light and fluffy, about 5 minutes.
  4. On low speed, mix in the egg and vanilla.
  5. Slowly add the dry ingredients.
  6. Add the chocolate chips and mix until just combined.
  7. Scoop the dough into balls and place on baking sheets. With the bottom of a glass, partially flatten the dough balls.
  8. Cover sheets with plastic wrap or foil and chill for at least a few hours.
  9. Preheat oven to 350°F.
  10. Sprinkle cookie dough with sea salt.
  11. Bake the cookies about 7 minutes. Rotate, then bake another 6–8 minutes, until slightly crispy on the edges, but still soft in the center.
  12. Place on a rack to cool.
